Finding Some Energy, Quick Quiche, and Crayons That Rock

A holiday weekend can end up leaving many of us exhausted. So, what can you do when Tuesday comes along and you feel like it's got to be Friday? Well first—take a long deep breath… Okay, now that you're feeling a bit more relaxed and focused, try to plan an activity just for you to rejuvenate your mind and body, which of course can be repeated throughout the week if necessary.

Here are some suggestions: a yoga class with even more mindful breathing, a bath with aromatherapy after the kid(s) go to bed, a quick meditation session (seriously try it, it works), a walk in the great outdoors (a little nature goes a long way), watching your favorite comedy (laugh and laugh, and laugh out loud). All of these activities are guaranteed to put a new look on your week and liven up your spirit so it can fly high.

English Broccoli and Cheese Quiche

serves 4

If you're in need of a quick dinner, this recipe comes together easily thanks to the prepared pie crust. Compliments of Organically Raised: Conscious Cooking for Babies and Toddlers, the book also offers a host of information for new moms who are ready to cook and looking to feed their babies the most nutritious foods they can.

Ingredients
1 unbaked pie crust (9-inch diameter)
2 cups finely chopped broccoli
1 small yellow onion, chopped
2 garlic cloves, minced
1 tsp. sea salt
2 pinches of ground red pepper
1/2 tsp. ground black pepper
3 eggs, well beaten
1 cup milk of preference
1/2 cup heavy cream
1 cup Cheddar cheese
1 cup mozzarella cheese
1 tsp. wheat germ
splash of olive oil
1 Tbs. butter or Earth Balance

1) Pour a little olive oil into a heated skillet. Add the broccoli, onion, garlic, salt, and peppers. Cook, stirring frequently, until the broccoli is tender and the onion is browning and beginning to caramelize. Set aside.

2) Preheat oven to 350 degrees. Beat together the eggs, milk, and cream in a mixing bowl. When well mixed, add the wheat germ.

3) Place the broccoli mixture in the pie shell. Evenly sprinkle the cheeses on top. Pour the egg mixture over the vegetables and cheeses. Bake for 40 minutes.
