Comeback Treat, Fruity Popsicles, and Colorful, Silicone Push-Up Molds

Popsicles are making a big comeback and rightfully so, since they are cool, delicious, and easy to make. Not to mention the possibilities are nearly endless of what they can be made of. They can be as simple as water with whole pieces of fruit frozen into them, plain juice, juice with added fruit like lemonade with pureed strawberries, or flavored yogurt frozen as is (or with a little water or juice to thin). Yogurt or kefir is a great way to add some density and calories to your pops, but if you want to keep them vegan, opt for bananas instead, which create a nice, hearty pop without the moo.

Recipe:

Banana Strawberry Orange Popsicles

makes 4 popsicles (using the Kinderville molds)

Ingredients
1 med banana
8 oz. organic strawberries
juice of 1 large orange
1 1/2 Tbsp. of sugar

1) Put all ingredients in blender, food processor, or Vitamix, and blend/process until smooth.

2) Pour mixture into popsicle molds.

I bought these molds by Kinderville about a year ago and have really enjoyed them. They are made from high-grade silicone, which means they are BPA, phthalate, and lead free; hygienic and resistant to bacteria; and dishwasher safe. The only downside is that the bottom corners need extra care to get them clean. I soak them first, and then use a small brush to get into the corners.
