Attention Santas, Super Smooth Butternut Squash Soup, and Bowl You Over Toy

To all the santa moms out there: once you're done putting the gifts together, wrapping them, filling the stockings, and feeding the milk and cookies to the dog :), don't forget to make some fun time for yourself. After all Santa is jolly, and so should you be. Make yourself laugh with some funny movie (, TV show, or book. It'll help you unwind, and put you in a better mood for Christmas day.

Recipe:

Butternut Squash Soup

A subtly delicious smooth soup that will win the hearts of everyone, including your kids.

Ingredients
4 Tbs. olive oil
1 medium white or yellow onion, chopped
4 cups veggie broth
1 medium butternut squash, peeled, seeded and cut into chunks
1 organic Granny Smith apple, peeled, cored, and cut into chunks
1 large organic Yukon gold or Russet potato, peeled and cut into chunks
half and half or cream, optional

1. In a large pot on medium high heat sauté onions in olive oil until soft and translucent.

2. Add veggie broth, butternut squash, apple, and potato. Bring to a boil, and simmer on medium heat until vegetables are soft (a knife easily runs through them).

3. Take off heat and let cool for 5 minutes. Puree with a stick blender. Add cream or half and half before serving, or have it on the side for those who want it.
