Simple Play: Bowl of Floatie Fun, Vegetable Barley Soup, and Griddle Them Up Some Blueberry Pancakes!

Simple Play: Bowl of Floaties and Fun

This has turned out to be a wonderful and easy way to keep our daughter entertained while she is eating. It would also be a fun game for kids, while mom is busy in the kitchen. All you need is a bowl filled with some water, and an array of small objects, some that float and some that don't so that the child can learn about physics and have fun with the water.

We use beads (the wooden ones float), rocks and shells from the beach, thin foam cut outs, etc… She puts them in, takes them out—anything to get a little wet and see her actions cause reactions. Tip: Don't fill the bowl too much to avoid big water spills.

Recipes:

Easy Vegetable Barley Soup

A quick, healthy soup perfect for a busy weeknight. A toddler can even enjoy it once you cut the veggies a bit more.

Ingredients
6 1/2 cups water
2 Tbs. Better Than Bullion, Organic Vegetable Base
1/2 uncooked pearled barley
3 organic small potatoes, peeled and cubed
2 organic celery ribs, chopped
3-4 organic carrots, peeled and chopped
1/3 cup chopped scallions
a couple splashes of Braggs Liquid Aminos

1. Pour 6 1/2 cups of water, bullion, and barley into large soup pot and heat on medium heat. Once it boils, turn down and let simmer for 20 minutes.

2. Add potatoes and celery. Let simmer another 10 minutes. Add carrots and scallions. Simmer soup another 10 minutes, or until everything is soft. Splash in Braggs for a heartier flavor and enjoy!

Blueberry Whole-Wheat Pancakes

A fluffy and tasty way to start your morning. Your kids will love you for it. For more protein, sprinkle wheat germ on the top of each pancake before adding maple syrup.

makes about 6 medium pancakes

Ingredients
1 cup milk of choice + 1 Tbsp. lemon juice
2 eggs
3 Tbsp. unsalted butter or Earth Balance, melted
1/2 cup all-purpose flour
1/2 cup whole-wheat flour
1/8 cup wheat germ
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 1/2 Tbsp. sugar
1 cup organic blueberries, fresh or frozen
cooking oil spray

1. In a medium bowl mix milk and lemon juice. Let sit for five minutes.

2. Add eggs and butter, to the milk and lemon and whisk to blend. In a small bowl whisk together dry ingredients: flours, wheat germ, salt, baking powder, baking soda, and sugar. Add dry mixture to the wet mixture, and whisk batter until it is combined.

3. Heat a griddle over medium-high heat and spray with oil. Meanwhile, fold in blueberries (if using frozen defrost first, then drain as much liquid as you can). When the griddle is hot pour as much batter as desired, and flip after about two minutes.

Like idea #10: how to organize wrapping paper. I only have one roll of wrapping paper, but it's such a great idea, I may do it anyway.
