Homemade Hummus

Honestly, nothing beats homemade hummus, and if you've never made it before you should give it a try. It tastes sooo much better fresh, and won't have any of the preservatives that most of the store bought ones add. The below recipe makes a lot of hummus, so I've included a healthy sandwich recipe to go along with it. This sandwich is one of my favorites and will use up any hummus you haven't devoured

Homemade Hummus

Traditional chickpea hummus has become an American snack favorite and for a good reason it is delicious, healthy, and high in protein! Tip: If using hummus from the fridge make sure to warm it up before eating, so all the flavors can shine through.

Ingredients
1 1/4 cup dried chickpeas
1/2 cup tahini, (I prefer Once Again Organic Tahini, because it is not bitter)
2 Tbsp. olive oil
2 small cloves garlic
1/4 cup lemon juice
salt to taste

1. Using a medium saucepan, soak chickpeas in water for 12 hours. Before cooking, add water if needed so that chickpeas are covered by an inch or so of water. Bring to a low simmer when covered and cook for 2-3 hours, or until soft.

2. Drain chickpeas, and put them still warm into a food processor. Add the other ingredients and blend until smooth. Add water to thin, 1/4 cup at a time, and additional salt if needed. Enjoy on carrots, tomatoes, pita bread, or chips!


Hummus Avocado Sandwich

In case you have an excess of hummus around or are just looking for a new great sandwich recipe. You won't be disappointed with this one. I could eat it everyday. Vegans or dieters feel free to lose the cheese: it's really just as good without it.

Ingredients
2 slices of multigrain bread
mustard
1/4 cup hummus
1/2 avocado, sliced
1 slice of Monterey Jack cheese
1-2 lettuce leaves, torn
2 tomato slices

1. Toast bread. Spread one or both pieces with mustard. Then spread hummus on one piece. Lay avocado slices on top of hummus. On other piece place cheese, lettuce, and then tomatoes. Close the sandwich and enjoy!
