Zesty Potato Salad



Colorful and tasty this potato salad will jumpstart your taste buds with its delicious dressing, which is super easy to make with a food processor. Just make sure you go for organic when shopping for the salad ingredients, because all three: potatoes, bell peppers, and spinach are on the dirty dozen.

Recipe:

Potato Salad with Lime Cashew Dressing

Ingredients
Dressing
1/4 cup canola oil
3 Tbs. fresh lime juice
1 medium garlic clove, pressed
1/4 cup cashews, chopped
2 Tbs. chopped cilantro
1/3 tsp. salt
pepper to taste

5 organic red potatoes, peeled and cubed
1 organic yellow bell pepper
2 cups chopped organic spinach

1. Put all Dressing ingredients in a food processor and process until smooth. Use a spatula to get the Dressing into a small container. Cover and refrigerate.

2. Boil potatoes in water to cover, until a fork slides through them with ease. Meanwhile, chop bell pepper and spinach and put into a serving bowl. When potatoes are done, drain and let cool.

3. Add cool potatoes to bell pepper and spinach. Pour on Dressing, mixing until it is completely combined.
