Healthy Waffles


What better way to celebrate the beginning of Mother's Day than with some piping hot, fresh from the iron waffles. And if they are healthy waffles, then all the better. I've been making this recipe for a few years, and every time I revisit it I am surprised by how yummy it is. The texture added by the cornmeal is wonderful, and the brain boost from the flax meal is a perfect way to start the day.

Recipe:

Healthy Waffles

Ingredients:
1/3 cup all purpose flour

1/3 cup whole-wheat flour

1/3 cup cornmeal
3 Tbsp. flax meal

1 Tbsp. baking powder

1/8 tsp. salt

1/4 tsp. baking soda

1 Tbsp. granulated sugar

4 Tbsp. unsalted butter or Earth Balance, melted and cooled

1 1/4 cup soymilk + 1 Tbsp. lemon juice 

2 large eggs, beaten


1. In a large bowl, whisk flours, cornmeal, flax meal, baking powder, salt, baking soda, and sugar until blended. Make a well, and pour in butter, lemon milk mixture, and eggs. Stir until completely blended.

2. Heat waffle iron, spray with oil, and pour in the appropriate amount of batter for your waffle maker. (This recipe makes about 6 waffles with my medium-sized waffle maker.)


Note to Moms:

At the very least make sure you let someone else do the clean up, and have a wonderful, wonderful day. You deserve it!!!
