Blueberry Bran Muffins
If you love blueberries and bran muffins, you are definitely gonna love this recipe. It is delicious, healthy, and satisfying, and makes a great late morning or late afternoon snack for the little ones. The ingredients include both oat and wheat bran, which can be found in the bulk section at many health food stores.
Recipe:
Blueberry Bran Muffins
makes 12 big muffins or 12 regular muffins + baby loaf
Ingredients
2 cups wheat bran
1 cup oat bran
1 cup whole wheat flour
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 large eggs
2/3 cup soymilk (or milk of choice)
2/3 cup yogurt
1/3 cup canola oil
1/3 cup molasses
1/3 cup honey
2 bananas
1 1/2 cup organic frozen blueberries
1. In a large bowl, combine bran, flour, baking soda, baking powder, and salt; set aside. In a small bowl, combine eggs, milk, yogurt, canola oil, molasses, bananas, and honey and mix well. Note: if you don't have molasses double the honey.
2. Heat oven to 375 degrees. Pour wet ingredients into dry, and mix until combined. Fold in blueberries. Scoop into prepared muffin tins (and small bread pan if making regular sized muffins).
3. Bake for 22 minutes or until a knife poked into the middle of a muffin comes out clean.
